Curious, I asked AI (Google) and yes, there are many places in the US that specialize in fries and let you customize. Some very expensive ones in New York apparently.
I thought the idea was interesting but I wondered if it was too specialized to support a whole store. They didn’t seem to have anything else on the menu.
